Step 1: Make pretzel dough
In the bowl of a stand mixer fitted with the dough hook attachment, combine flour, Creamy Mac & Cheese Popcorn Seasoning, instant yeast, sugar, and warm water. Knead for 5 to 8 min., until soft and elastic. Cover bowl and let dough rise for 30 min. or until nearly doubled in size.
Step 2: Assemble pretzel dogs
Preheat oven to 450 degrees. Prepare a baking sheet lined with parchment paper and greased and set aside. In a 9x9 pan, combine boiling water and baking soda and stir until dissolved. Set aside. Split dough into 8 equal pieces. Let dough rest for 8 min. Roll each piece into a 10 to 12 inch long rope and wrap around hot dog. Pinch ends of dough together to keep dough from unwrapping. Place each wrapped hot dog in hot water bath for 2 min., spooning water over the tops as needed. Remove with slotted spatula and transfer to prepared baking tray.
Step 3: Bake pretzel dogs
Brush each pretzel dog with melted butter and sprinkle with Creamy Mac & Cheese Popcorn Seasoning. Let rest for 10 min. Bake for 8-12 min., until golden brown.
Step 4: Make cheese sauce
In a medium pot, bring cream to a boil. Reduce heat to medium-low. Whisk in cream cheese and Creamy Mac & Cheese Popcorn Seasoning until smooth. Cook over low heat, stirring frequently, until sauce reaches desired thickness.
