Mediterranean Dill Risotto

This easy, one-pot risotto requires minimal active cooking and stirring, and makes a great Mediterranean-style weeknight dinner.

DIRECTIONS:

In a wide, heavy-bottomed pot, melt butter over medium heat and add Mediterranean Dill Risotto mix. Stir for 1 min. until mixture is coated in butter and aromatic. While stirring, slowly pour in 3 cups hot water. Reduce heat to medium-low and simmer (uncovered) for 15 to 20 min. until liquid is mostly absorbed, stirring occasionally. Increase heat to medium and add remaining 1 cup hot water. Stir constantly for 3 to 6 min. until rice is tender and mixture is creamy. Remove from heat and stir in Greek yogurt. Risotto will thicken as it sits and cools. If needed, thin with a splash of hot water. Serve immediately.

SERVING SUGGESTIONS:

Serve with grilled chicken. Top with feta, fresh herbs, tomatoes, olives, or lemon wedges.

*For a vegetarian/vegan version, omit chicken and use vegan butter.
