Ingredients

1 cup all-purpose flour

2 Tbsp. cornstarch

6 Tbsp. popcorn seasoning of choice, divided:




2 Tbsp. water

1 egg

1 lb. chicken breast or tenders, cut into 1-inch pieces

Canola oil, to fry

Directions

Step 1: Make dredge

In a medium bowl, combine flour, cornstarch, and 4 Tbsp. popcorn seasoning of choice. Add water and mix until mixture is the consistency of damp sand. Set aside.

Step 2: Dredge chicken

In a medium bowl, whisk egg. Drop pieces of chicken into egg and toss to coat. Transfer chicken to flour mixture and toss to coat, ensuring all edges of chicken are coated in flour mixture.

Step 3: Fry chicken

In a Dutch oven, heat 2 inches of oil to 375 degrees. Carefully drop a few pieces of chicken at a time into oil and fry for 3 to 4 min. until pieces are golden brown and chicken reaches an internal temperature of 165 degrees. Continue frying in batches, adjusting heat to ensure oil stays between 350 and 370 degrees.

Step 4: Finish and serve

Immediately after removing chicken from fryer, sprinkle with remaining popcorn seasoning of choice. Serve hot.
