Tom Kha Gai is a comfort food from Thailand. Tom means soup, Kha means galangal, Gai means chicken, so it is essentially a spiced Thai chicken soup. Aromatic and complex flavors like lemongrass, galangal, and makrut lime leaves come together with earthy shiitake mushrooms in this rich coconut curry soup with low-medium heat.

DIRECTIONS:
In a medium pot, stir Thai Coconut Curry Soup Mix into chicken broth and add chicken thighs. Bring to a simmer over medium heat. Reduce heat to medium-low, cover, and cook for 20 to 25 min., or until chicken is cooked through. Remove chicken thighs from pot and slowly stir in coconut milk. Shred chicken using two forks and add back to pot. Serve hot.

NOTES:
Serve with: Cilantro, sliced scallions, and lime wedges.
