INGREDIENTS:
3 cups balsamic vinegar
2 Tbsp. honey
2 Tbsp. extra-virgin olive oil
1 Tbsp. Wash Park All-Purpose Seasoning
4 (6 oz.) filets mignons
Salt & pepper
2 beefsteak tomatoes, sliced
4 large slices fresh mozzarella
Basil leaves, to garnish
DIRECTIONS:
Preheat grill for high heat. In a small bowl, combine balsamic vinegar, honey, olive oil, and Wash Park All-Purpose seasoning. Pour over filets mignons and marinate for 20 min. Remove from marinade and pat dry. Season filets mignons and tomatoes with salt & pepper. Grill filets mignons 2 to 5 min per side, reaching an internal temperature of 125 degrees for rare up to 160 degrees for well done. Move filets mignons to indirect heat on grill. Top with mozzarella and tomatoes, and cover until cheese is melted, about 2 min. Garnish with basil and serve.
