Golden Milk Caramel Popcorn

Ingredients
4.5 Tbsp. coconut oil, divided ½ cups unpopped popcorn ¼ cups brown sugar 1.5 Tbsp. water
Golden Milk Chai Spice
2 tsp. Golden Milk Chai Spice
Fine Pink Himalayan Sea Salt
Fine Pink Himalayan Sea Salt, to taste
Directions
Melt 3 Tbsp. coconut oil in a large dutch oven or stock pot with a lid over medium-high heat. Add popcorn kernels, toss in oil, and cover pot. After 2 to 3 min., popcorn should start popping. When you count 8 to 10 seconds between pops, remove from heat. Mix remaining 1 1/2 Tbsp. coconut oil, brown sugar, water, and Golden Milk Chai Spice in a microwave-safe bowl and heat for 30 seconds in microwave. Stir caramel sauce, then microwave for an additional 15 seconds. Remove from microwave and stir to emulsify. Pour caramel sauce over popped popcorn and toss to coat. Sprinkle with salt to taste.
Recipe Notes
Alternatively, use microwave-popped popcorn. Also, butter or ghee may be used in place of coconut oil.
