Vegetarian Sweet Jerk Shredded Jackfruit

Jackfruit is an awesome substitution for pulled pork or other shredded meat. Enjoy it in a sandwich with an extra drizzle of Sweet Jerk and top with coleslaw.

Ingredients
2 Tbsp. vegetable oil 1 yellow onion, thinly sliced ¼ tsp. Kosher Salt 2 (14 oz.) cans young jackfruit, drained*
Sweet Jerk Barbecue Sauce
1 cups Sweet Jerk Barbecue Sauce
Directions
Heat oil in a large skillet over medium heat. Add onion and salt and cook for 10 min., stirring often until onion slices are softened. Add jackfruit and use a spoon to gently press it in the pan; it will get easier to break it into shreds as it cooks. Stir in barbecue sauce and cook until heated through, about 1 more min.
Recipe Notes
*Jackfruit is a common replacement for shredded meat and is becoming more widely available in grocery stores. If your store doesn't have it, it can also be found in Asian markets. Look for young jackfruit that is packed in brine or water to avoid the sweet, ripe jackfruit that often comes packed in syrup.
