*Plantains should be yellow and black in color. if they are still a little green, let them ripen for a few more days before using.

4 ripe plantains, peeled and sliced diagonally into 1-inch thick pieces*

Directions

In a large skillet, heat about 1/2 inch of oil over medium-high heat. When oil is shimmering, add plantain slices, working in batches if needed. The oil should be hot enough that it bubbles around the pieces of plantain. Fry for 3 to 4 min. per side or until golden brown. While plantains fry, add Sweet Jerk to a small pan and heat over medium-low until sauce comes to a simmer and thickens slightly. Use tongs to remove plantains from skillet, gently shake off excess oil, and add to sauce. Gently toss until fully coated and serve hot.
