Spiced Maduros (Fried Ripe Plantains)

Ingredients
Canola oil, for frying 4 ripe plantains, peeled and sliced diagonally into 1-inch thick pieces*
Cuban Island Spice
2 Tbsp. Cuban Island Spice
Directions
In a large skillet, heat about 1/2 inch of oil over medium-high heat. When oil is shimmering, add plantain slices, working in batches if needed. The oil should be hot enough that it bubbles around the pieces of plantain. Fry for 3 to 4 min. per side or until golden brown. Use tongs to remove plantains from skillet, gently shake off excess oil, and add seasoning. Gently toss until fully coated and serve hot.
Recipe Notes
*Plantains should be yellow and black in color. if they are still a little green, let them ripen for a few more days before using.
