California Citrus Vinaigrette

This refreshingly simple vinaigrette makes a great non-dairy dressing for chicken salad or salmon salad.

Ingredients
1/3 cup apple cider vinegar or balsamic vinegar 1 to 2 Tbsp. California Citrus Rub 2/3 cup olive oil

Directions
Whisk vinegar with 1 to 2 Tbsp. California Citrus Rub. (Tip: Start with 1 Tbsp. and add more later to taste.) Continue to whisk and slowly drizzle in olive oil until combined.
