Caribbean Coconut Rice

Ingredients
1 cup uncooked white rice 1 1/2 cups water 1/2 cup coconut milk 3/4 cup sweetened coconut flakes
Ground Jamaican Allspice
1/4 tsp. Ground Jamaican Allspice
Directions
Combine rice, water and coconut milk in a medium saucepan. Bring to a boil, then reduce to a simmer, cover and cook for 15 min. Working quickly, remove the cover and thoroughly stir in coconut flakes and allspice. Replace cover and let flavors meld together for 5 min.
