Founders' Notes
We grill jerk chicken often. It’s one of our all-time favorite meals. In fact, we even served it at our wedding. Green jerk, which we used to call Bajan, is jerk’s more herby and less spicy cousin. The flavor profile is spot on and it’s a great way to share one of the Caribbean’s proudest flavor traditions with friends and family who can’t quite stand the heat. Not that there’s anything wrong with that!
