This hearty and flavorful Tortilla Soup is infused with Taco Seasoning, adding depth with smoky chiles, cumin, Mexican oregano, and a touch of masa harina for a rich, authentic texture.

Serving Suggestions

Ingredients

For soup:

2 Tbsp. olive oil

1 yellow onion, diced

4-5 cloves garlic, minced

1 jalapeño, finely chopped (optional for heat)



1 (14.5 oz) can fire-roasted diced tomatoes

4 cups low-sodium chicken broth

1 ½ cups cooked shredded chicken (rotisserie works great)

1 (15 oz) can black beans, drained and rinsed

1 cup frozen or fresh corn kernels

¼ cup tomato sauce (enhances richness)

2 Tbsp. fresh-squeezed lime juice

Salt and black pepper, to taste

For the Crispy Tortilla Strips:

4 corn tortillas, sliced into thin strips

2 Tbsp. vegetable oil

1 Tbsp. Taco Seasoning

For serving:

1 avocado, diced

½ cup cotija or shredded cheddar cheese

¼ cup freshly chopped cilantro

Sour cream or Mexican crema

Extra lime wedges

Directions

Make the Crispy Tortilla Strips: Preheat the oven to 375°F (190°C). Toss the tortilla strips with oil and 1 Tbsp. Taco Seasoning. Spread on a baking sheet and bake for 8-10 minutes, flipping halfway, until crispy and golden. Set aside.

Sauté the Aromatics : Heat olive oil in a large pot over medium heat. Add onions and jalapeño; sauté for 3-4 minutes until soft. Stir in garlic, 3 Tbsp. Taco Seasoning, and cumin; cook for 30 seconds until fragrant.

Build the Soup Base: Stir in diced tomatoes, broth, tomato sauce, and corn. Bring to a gentle simmer, then add shredded chicken and black beans. Simmer uncovered for 15-20 minutes, allowing flavors to develop.

Finish and Serve: Stir in lime juice, then taste and adjust seasoning as needed. Ladle the soup into bowls and top with crispy tortilla strips, avocado, cheese, and cilantro. Serve with a dollop of sour cream and lime wedges on the side.
