Ingredients

2 cups (11 oz.) gluten-free all-purpose flour, plus more for dusting

2 Tbsp. finely chopped chives


2 tsp. Kosher Salt

2 tsp. xanthan gum

4 eggs

3 Tbsp. water

Directions

Add flour, chives, dill, salt, and xanthan gum to a large bowl and whisk to combine. Add eggs and water and stir to incorporate. Use your hands to continue mixing until a smooth dough forms. Split dough in half. Dust a clean work surface and rolling pin lightly with gluten-free flour. Roll half of the dough into a large oval, roughly 22 inches long and 14 inches wide (don't worry if it's not perfect). Use a pizza cutter to cut dough widthwise into 1/2-inch strips and gently toss to coat with flour. Set aside in a bowl and repeat with remaining dough half.

Bring a large pot of salted water to a boil over high heat. Add pasta noodles and boil for 3 to 4 min., or until noodles are softened with a slight chew. Drain and toss with prepared sauce.
