DIRECTIONS:
In a small bowl, mix Massaman Curry Mix with water to form a paste and set aside. In a large wok or skillet, heat coconut oil over medium heat. Add paste and fry for 1 min., stirring constantly. Stir in coconut milk and soy sauce. Bring to a boil, stirring occasionally, then reduce heat to low. Add chicken and vegetables, cover, and simmer for 10 to 15 min., or until chicken is cooked through. Stir in nuts and cook, uncovered, for 4 to 5 min. before serving.
NOTES:
Serve with: Rice.
Garnish with: Fresh cilantro or mint, lime juice, and chopped peanuts.
Tip: To save time, use frozen vegetables instead of fresh and add during the last 5 min. of cooking.
