DIRECTIONS:
In a 14 oz. microwave-safe mug, stir Spiced Carrot Mug Cake Mix, flour, and baking powder with a fork. Add egg, butter, and water. Stir until combined, being sure no dry ingredients remain at bottom of mug. Microwave in 30-second intervals, just until the center of the cake is set (about 90 seconds total). Let cool for 1 min. before enjoying.
NOTES:
Top with Cream Cheese Icing: Combine 2 Tbsp. each cream cheese and powdered sugar. Microwave for 15 seconds, mix until smooth, and drizzle over cake.
To bake in an oven, preheat oven to 350 degrees. Bake cake in a mug for 24-26 minutes or in a mini cupcake tray for 10 minutes (makes 12 mini cupcakes).
