We wanted to develop a dessert that's unexpected but familiar, exciting but comforting, and appealing to the masses. Brainstorming fall flavor possibilities led us down many delicious paths: coffee cake, gingerbread cake, spice cake, apple cobbler, and pecan pie, but the flavor that stuck out to us was carrot cake.
Carrot cake is a beloved dessert in almost any season–it's dense, sweet, moist (and best when slathered with a thick cream cheese frosting). But this treat can be a little bit labor intensive. Grating carrots for a fresh cake is a hassle, and it makes whipping up a quick carrot cake overwhelming and potentially not worth the effort, especially if you're not trying to feed an entire party of people.
This quick and easy dessert can pull double duty as an indulgent microwave mug cake for two or stretch to make enough mini cupcakes for a dozen.
What does Spiced Carrot Mug Cake taste like?
This Spice & Easy blends carrot and spice cake flavors. Pre-grated, dried carrots provide the same sweet lift and slight crunch as freshly grated carrots. Combining sweet and warm baking spices like cinnamon, ginger, cloves, allspice, and cardamom, add the rich taste of a spice cake. With these flavors perfectly blended, we had the makings of the ultimate 90-second carrot cake.
How to use Spiced Carrot Mug Cake
You can make our Spiced Carrot Mug Cake two ways! The classic way (and the directions on the label) is to make it as a quick microwave mug cake. You'll need a large (14 oz) mug. Then combine the Spice & Easy mix with a few other ingredients (right in the mug!) and microwave for about 90 seconds.
For a more classic (and we think, delicious) version, you'll want to top it with a quick & easy cream cheese icing. Combine 2 Tbsp. of cream cheese and powdered sugar. Microwave for about 15 seconds and drizzle over the cake.
We also wanted to give you the option to make mini cupcakes instead. Mix them up the same way and bake them in a mini muffin tin at 350 degrees for 8 minutes instead of microwaving in a mug.

Looking to serve carrot cake for more people but don't want to grate the carrots? Try Spiced Carrot Mug Cake Cupcakes: Mix the batter as written and pour it into a mini cupcake tin. Bake at 350 for 8 minutes, ice with cream cheese frosting, and serve! Not into cream cheese frosting? Mix 1 part milk to 2 parts powdered sugar for a sweet sugar glaze that also compliments this carrot cake.
