Behind the Seasoning: Spiced Carrot Mug Cake Spice 'n Easy
A list of things we love about fall: the cooler weather, the changing leaves, the fashion, the harvest of hearty vegetables. But arguably the most important part of fall? The desserts.
We’ve spent the last several months avoiding turning on our ovens in the sweltering heat, and now that the days are feeling cooler and the nights are downright cold, it’s time to pull out the bundt pans, heat up the Dutch ovens, and maybe revive that sourdough starter abandoned in the back corner of the fridge.

We wanted to develop a dessert that’s unexpected but familiar, exciting but comforting, and appealing to the masses. Brainstorming fall flavor possibilities led us down many delicious paths. Polling Savory Spice HQ for flavor favorites, we came up with a pile of possibilities: coffee cake, gingerbread cake, spice cake, apple cobbler, pecan pie…but the hero that stuck out to us was carrot cake.
Carrot cake is a beloved dessert across the world–it’s dense, sweet, moist, and often slathered with a thick and creamy cream cheese frosting. But grating carrots for a fresh cake is a hassle, and makes whipping up a quick carrot cake overwhelming and potentially not worth the effort.
Luckily, we have pre-grated dried carrots that provide the same sweet lift and crunch as freshly grated carrots. Combined with sweet and warming spices like cinnamon, ginger, cloves, allspice, and cardamom, we had the makings of a perfect, 90-second carrot cake on our hands.
Spiced Carrot Mug Cake Spice ‘n Easy is straightforward: combine the contents of the bag with flour, baking powder, an egg, butter, and water directly in the mug you plan to microwave and eat out of. Microwave for less than 2 minutes, let cool, and dig in! It’s the perfect combined blend of spice cake and carrot cake: a sweet-spiced cake crumb starring cinnamon, cardamom, cloves, and a hint of ginger, plus the brown sugar and carrot-y goodness of carrot cake.
Of course, we wouldn’t offer you carrot cake without offering an equally simple cream cheese frosting. Combine 2 Tbsp. of cream cheese and 2 Tbsp. powdered sugar, microwave, mix, and drizzle over your baked mug creation. The result is a marvelously moist, dense, and chewy carrot cake elevated with a fall-inspired medley of spices and topped with a perfectly sweet and tangy cream cheese frosting.
Looking to serve carrot cake for more people but still uninterested in grating carrots? Try Spiced Carrot Mug Cake Cupcakes: mix up the batter as written and pour into a mini cupcake tin. Bake at 350 for 8 minutes, ice with cream cheese frosting, and serve! Not into cream cheese frosting? Mix 1 part milk to 2 parts powdered sugar for a sweet sugar glaze that compliments this carrot cake just as well.
