How to Use
1 Sun-Dried Tomato Minestrone mix
1 (28 oz.) can diced tomatoes, undrained
5 cups water
2 cups small diced or thinly sliced vegetables, such as beans, carrots, kale, peas, potatoes, squash, etc.
1 cup small, dry pasta, such as ditalini, elbows, farfalle, shells, etc.

DIRECTIONS:
In a large pot, melt butter over medium-high heat. Add Sun-Dried Tomato Minestrone mix, tomatoes, and water. Bring to a boil, then reduce heat to medium-low. Simmer (uncovered) for 20 min., stirring occasionally. Stir in vegetables and pasta and simmer for 15 to 20 min. until vegetables are cooked through and pasta is tender.
SERVING SUGGESTIONS:
Top with fresh basil and Parmesan. Serve with crusty bread. Try making with Italian sausage.
NOTES:
Add sausage, beans, or extra veggies to make it your own.
For a vegan version, replace butter with vegan butter.
