Our California paprika comes from a hybrid pepper indigenous to California. This paprika comes from drying, grinding and sifting these peppers through a variety of screens until reduced to a deep, dark red powder. No one pepper is used to make paprika; it is made from a number of different red peppers.
Not readily available in the common supermarket, it is widely used in the commercial food industry to enhance or color products and food dishes equally. Try using California paprika when making barbecue rubs, add it to chili or chili powders, use it as a garnish or add it anywhere a deep rich red color is desired.

California Paprika Recipe
For 4-5 T of mix: Blend 2 T paprika with 1 T kosher salt, 1 1/2 t ground ginger and cinnamon, 3/4 t allspice, and pinch of cayenne (optional)
