Capitol Hill Cashews and Asparagus

A simple and healthy side dish that goes well with chicken, beef, or pork.

Ingredients
1 bunch asparagus, cut into 4-inch pieces 1 Tbsp. olive oil 1/2 cup raw cashews
Capitol Hill Seasoning
2 Tbsp. Capitol Hill Seasoning
1/2 lemon, juiced
2 cups cooked brown rice
Directions
In a large saute pan, heat olive oil over medium-high heat. Add asparagus and cook until tender, 2 to 4 min. depending on width of asparagus. Remove from pan and set aside. Reduce heat to low and add cashews. Cook until golden brown, about 2 min. Add Capitol Hill and cook about 1 more min. or until the shallots in the Capitol Hill seasoning start to brown. Add asparagus back to pan. Remove from heat and stir in lemon juice.
