Jerusalem Tomato Salad

Tasty and fresh, this salad is wonderful to serve alongside lamb, falafel, or with hummus.

Ingredients
2 pita rounds, cut into bite-size pieces 1/2 cup extra virgin olive oil 1/4 cup lemon juice
Za'atar
4 tsp. Za'atar Seasoning
2 scallions, thinly sliced
Minced Garlic
1/2 tsp. Minced Garlic
Mayan Sea Salt
1/4 tsp. Mayan Sea Salt
Coarse Black Malabar Pepper
1/4 tsp. Coarse Black Malabar Pepper
3 large tomatoes, diced
1 cucumber, diced
1 Tbsp. chopped fresh parsley

Step 1
Toast pita
Step 2
Preheat oven to 350 degrees. Spread pita pieces on a baking sheet and toast for 12 min. until lightly crisped. Remove from oven and reserve.
Step 3
Make vinaigrette and toss salad
Step 4
In a medium bowl, whisk together olive oil, lemon juice, Za'atar Seasoning, scallions, Minced Garlic, Mayan Sea Salt, and Coarse Black Malabar Pepper. In a large bowl, combine all ingredients and let sit 10 min. before serving.
