Zanzibar Coconut Chicken Curry

Step 1
Heat oil in a large skillet or saucepan over medium-high heat. Add chicken and cook until lightly browned, about 4 to 5 minutes. Remove from pan and set aside.
Step 2
Add onion to the pan and cook until softened, about 5 minutes. Stir in garlic and cook for 30 seconds.
Step 3
Add Zanzibar Curry Powder and cook for 30 seconds more, stirring constantly.
Step 4
Add tomatoes and cook for 2 to 3 minutes, stirring occasionally.
Step 5
Return chicken to the pan. Add coconut milk and salt and stir to combine.
Step 6
Bring to a gentle simmer and cook for 15 to 20 minutes, until the chicken is cooked through and the sauce has slightly thickened. Serve over steamed rice.
Recipe Notes
Swap chicken for shrimp, fish, beef, chickpeas, or vegetables to make it your own. Add diced potatoes during the simmering step for a heartier meal.
