Cowboy Chicken Tacos

Ingredients
4-6 chicken breasts 2 Tbsp. brown sugar 1 Tbsp. Dijon mustard 2 cups salsa, any type 4 Tbsp. choice of seasoning:

15 oz. can corn, drained
15 oz. can black beans, drained and rinsed
½ cup sour cream, plus extra for serving
Tortillas, flour or corn, for serving
Lime wedges, for serving
Cilantro, for serving
Avocado, sliced, for serving
Directions
Step 1
Place chicken breasts in a 5-6 quart greased slow cooker.
Step 2
In medium bowl mix brown sugar, mustard, salsa, and seasoning.
Step 3
Pour mixture over chicken. Add water to cover chicken, if needed. Cook on low for 6-8 hours or high for 4 hours.
Step 4
With 30 minutes of cook time remaining, remove the lid and shred the chicken using two forks.
Step 5
Add beans, corn, and sour cream to the slow cooker and mix together with the chicken. Replace lid and cook for remaining 30 minutes.
Step 6
Serve with warm tortillas, lime wedges, sour cream, and guacamole. Add a sprinkle of seasoning for extra flavor.
