Grated Apple Pie

We fell in love with this pie recipe submitted by a customer for our Oklahoma City store's pie contest. The texture falls somewhere between a chess pie and a traditional apple pie, and grating the apples ensures you get tons of apple flavor in every bite. Use pecans or almonds for the topping.

Ingredients
1 cup sugar 2 Tbsp. flour
Supreme Saigon Cinnamon
2 tsp. Supreme Saigon Cinnamon
pinch of salt
4 cups grated apples*
1 (9-inch) uncooked pie crust
1/4 cup plus 2 Tbsp. melted butter
1 egg
1 cup roughly chopped pecans (or almonds if using)
Cinnamon Sugar
2 Tbsp. Cinnamon Sugar
Directions
Preheat oven to 400 degrees. Combine first 4 ingredients in a large bowl. Add apples and toss to coat. Allow mixture to sit for at least 15 min. while sugars extract the juice from the apples. Meanwhile, line a pie pan with the pie crust. Mix melted butter and egg together and fold into apple mixture. Pour filling into prepared pie pan. Top with pecans and sprinkle with Cinnamon Sugar. Bake for 10 min. Reduce temperature to 350 degrees and bake for another 50 to 60 min. until pie is just set in the middle. Let cool completely before cutting into it.
Recipe Notes
*You'll need 4 to 5 apples for 4 cups grated apples. You don't have to peel the apples but you can if you wish.
