A versatile recipe perfect for using up whatever winter veggies you can get your hands on. Season with a variety of blends for a hearty, comforting weeknight meal.

Ingredients

4 cups winter veggies of choice, cut into large cubes, such as:

Brussels sprouts
Mushrooms
Butternut squash
Acorn squash
Beets
Turnips
Potatoes
Sweet potatoes
Onion

2 Tbsp. canola oil


1 small pork tenderloin, cubed

Bamboo skewers, soaked in water for 30 min.

Directions

Step 1: Roast veggies

Preheat oven to 400 degrees and line a sheet tray with parchment paper. In a large bowl, combine veggies, oil, and Salt & Pepper Tableside Seasoning and toss to coat. Spread veggies in an even layer on prepared sheet tray. Roast for 25 to 30 min. until fork-tender. Let cool for 5 min.

Step 2: Grill skewers

Preheat grill or grill pan for medium-high heat and brush with oil. Thread skewers, alternating pork and veggies. Grill skewers for 4 min. per side or until pork reaches an internal temperature of 145 degrees.
