Grill up Middle Eastern-inspired kofta kebabs for a fun layer of flavor on your next cookout. Serve kebabs with pita, red onions, and tzatziki to make wraps, or with side dishes like couscous, tomato salad, and grilled veggies.

1 egg, beaten

1/2 cup chopped cilantro

Directions

Step 1: Form kofta

Submerge wooden skewers in water to soak. Line a sheet tray with parchment paper. To a large bowl, add all ingredients except oil. Gently mix with clean or gloved hands just until mixture is homogenous. Form ½ cup of mixture at a time around each skewer into long, even logs. Set formed kofta on prepared sheet tray. Cover and chill for 1 hour or until ready to cook.

Step 2: Grill kofta

Preheat grill or grill pan for medium-high heat. Lightly brush kofta with oil to prevent sticking. Working in batches, grill kofta for 3 to 5 min. per side until browned and an internal temperature of 160 degrees is reached. Serve immediately with couscous, tzatziki, or pita.
