A deliciuos and traditional pea soup flavored with ham and sage.

Split Pea Soup

Ingredients

2 Tbsp. olive oil 1 cup diced onion 2 to 3 medium carrots, diced 3/4 cup diced celery Salt & pepper, to taste 2 cups dried split peas, sorted and rinsed 5 cups water 1 Tbsp. Poultry Seasoning 8 oz. ham, diced 2 to 3 Tbsp. chopped fresh parsley

Recipe Notes

Author's note: "I add the ham at the end because I find that it gets tough if I have it simmering the entire time. If you have a ham bone, throw that in at the beginning and let the flavors meld."
