Tequila Chile Lime Scallops

A unique and simple method for cooking scallops in a flavorful marinade/sauce.

Ingredients
1 lbs. scallops 2 oz. tequila 2 Tbsp. blue agave 2 Tbsp. olive oil
Crushed Aleppo Chiles
1 Tbsp. Crushed Aleppo Chiles
1 Tbsp. lime juice
Fine Pink Himalayan Sea Salt
1 tsp. Fine Pink Himalayan Sea Salt
2 Tbsp. cold, unsalted butter
Directions
Marinate scallops in tequila, blue agave, olive oil, Crushed Aleppo Chiles, lime juice, and Fine Pink Himilayan Sea Salt for 30 min. Heat a lightly oiled pan over medium-high heat. Remove scallops from marinade and pat dry. Sear for 2 to 3 min. per side or until golden brown. Transfer scallops to serving plate. Add marinade and butter to pan. Simmer until slightly thickened. Serve scallops over rice and drizzled with sauce.
