How to Use
1 cup water
6 Tbsp. vegetable oil, divided
1 Tbsp. lemon juice
1 lb. boneless, skinless chicken breasts or thighs, cubed
1 (12 oz.) bag frozen mixed vegetables
1/2 cup plain yogurt
1/2 cup half and half
About this Spice
DIRECTIONS:
In a small bowl, stir together Tikka Masala spice mix, 4 Tbsp. oil, water, and lemon juice to form a smooth paste. In a large skillet, heat remaining 2 Tbsp. oil over medium-high heat. Add chicken and cook for 5 to 7 min. until lightly browned. Reduce heat to medium-low and add spice paste. Simmer for 3 min., stirring often. Add vegetables and simmer for 3 min. Reduce heat to low and mix in yogurt and half and half. Simmer for 5 min., stirring occasionally.
SERVING SUGGESTIONS:
Top with cilantro and serve with rice and naan.
NOTES:
For vegetarian version, use 1 lb. firm tofu in place of chicken.
