Za’atar Roasted Carrots with Lemon-Honey Drizzle

This side dish pairs beautifully with roasted chicken, lamb, or as part of a mezze spread. For added drama and flavor, grill the carrots for the last 5 minutes or broil briefly for extra char.

Directions
Step 1
Preheat & Prep: Preheat oven to 450°F (220°C). Line a baking sheet with parchment or foil. Toss the carrots with olive oil, Za’atar Seasoning, and a bit of Fine Black Malabar Pepper until evenly coated.
Step 2
Roast & Char: Spread carrots in a single layer, cut side down. Roast for 25–30 minutes, flipping once halfway through. You want deep caramelization and slight char on the edges.
Step 3
Make the Drizzle: In a small bowl, whisk together lemon juice, zest, honey, and olive oil. Set aside.
Step 4
Finish & Serve: Transfer carrots to a serving platter. Drizzle with the lemon-honey mixture while warm. Sprinkle with flaky Kosher Salt and finish with your choice of toppings.
