Broiled Lobster Tails with Lemon Saffron Butter

Using Saffron Salt, only available in February, create an indulgent broiled lobster tail dinner with lemon saffron butter for dipping. Pair with The Essential Seared Steak recipe to recreate a classic surf-and-turf dinner at home.

Ingredients
Saffron Salt
1 tsp. Saffron Salt, plus more to taste
For broiled lobster:
Two, 4-ounce lobster tails
1/2 cup saffron butter
Sea salt, to taste
2 tsp. fresh parsley, chopped
2 lemon wedges, for serving
Directions
Step 1
Melt butter in a saucepan on low heat. Once melted add in lemon juice and Saffron Salt. Whisk until combined.
Step 2
Preheat broiler, and place the rack about 6 inches away from the direct heat.
Step 3
Prep and butterfly the lobster tails. Using kitchen scissors, cut the top shell of the lobster down the middle, being careful not to cut through the meat or bottom shell.
Step 4
Spread open the shell to expose the meat, being careful as the shells can be sharp. Loosen the meat from the shell and remove the vein, if present. Lift the meat from the shell, but keeping it attached at the base. Press the shell together and set the lobster meat on top.
Step 5
Brush the tops of the lobster tails generously with saffron butter, reserve remaining butter on stovetop for dipping.
Step 6
Broil for about 4-6 minutes (about 1 minute per ounce) until lobster is firm and opaque (white), and an instant thermometer reads 140° in the center of the tail.
Step 7
Serve with remaining saffron butter for dipping, lemon wedges, and a sprinkling of fresh parsley.
Recipe Notes
*Some oils have a higher smoke point and handle high-heat cooking better than others. We recommend oils like canola, grapeseed, peanut, or avocado for this recipe. Avoid using olive oil, as it will burn.
