Garden Harvest Grilled Summer Squash with Burrata

Step 1
Spread out summer squash on a paper-towel-lined surface. Sprinkle with Garden Harvest Seasoning. Let sit for 10 minutes, letting the paper towel absorb extra moisture, and they become pliable.
Step 2
Preheat grill to medium-high heat. When hot, lightly oil the grates.
Step 3
While the grill heats, using metal skewers, thread slices of summer squash onto skewers, around 4 slices per skewer. Brush summer squash with 1-2 Tbsp. olive oil on all sides.
Step 4
Grill for 3-4 minutes until grill marks form, then turn and continue to grilling for another 3-4 minutes.
Step 5
Remove summer squash from the skewers and transfer to a serving dish. Top with burrata pieces and pepitas and sprinkle with Garden Harvest Seasoning.
Recipe Notes
You can use any variety of long summer squash: straightneck yellow, green, yellow, or striped zucchini, or tatuma. Use a mandolin to slice summer squash lengthwise.
