Greek Lamb Sausage Pizza

The components of this Greek-inspired pizza can easily be made ahead, and using a store-bought pizza crust cuts down on overall prep and bake time. The sausage can be made on its own to add flavor to breakfast dishes or other Greek-inspired meals. And the sauce also makes a great dip for veggies or pita chips.

Greek Lamb Sausage Pizza

Ingredients

For sausage: 12 oz. ground lamb 3/4 lb. course ground pork shoulder* 1 small white onion, diced 1/2 cup dried bread crumbs
Parsley 2 Tbsp. Parsley
Limnos Lamb Rub 1 1/2 Tbsp. Limnos Lamb Rub
Minced Garlic 1/2 tsp. Minced Garlic
Coarse Black Malabar Pepper 1/2 tsp. Coarse Black Malabar Pepper
2 Tbsp. olive oil For sauce: 1 head garlic, roasted* 1/3 cup plain Greek yogurt 2 Tbsp. mayonnaise 1/4 cup grated Parmesan cheese 1/4 cup crumbled feta cheese
Limnos Lamb Rub 2 tsp. Limnos Lamb Rub
For pizza & toppings: 1 large pre-cooked pizza or flatbread crust 2 tsp. olive oil
Cantanzaro Herbs 2 tsp. Cantanzaro Herbs
1 red bell pepper, thinly sliced 1/2 red onion, thinly sliced 1/2 cup pitted, halved Kalamata black olives 1/4 cup crumbled feta cheese 1/4 cup packed fresh torn basil leaves

Recipe Notes

*The sausage works with regular ground pork, but pork shoulder is more flavorful; ask your butcher to grind it for you. To roast garlic, slice off top of head to expose cloves, sprinkle with 1 tsp. olive oil, wrap tightly in foil and roast in a 400-degree oven until soft, 30 to 40 min. When head is cool enough to handle, roasted cloves should squeeze right out.
