Honey Butter Kettle Corn

Ingredients
3 Tbsp. avocado oil (or other high-heat oil) 1/2 cup popcorn kernels
Honey Butter Seasoning
2 Tbsp. Honey Butter Seasoning, or to taste
Directions
Step 1
Place a large, heavy-bottomed pot over medium-high heat.
Step 2
Next, add the oil and three or four popcorn kernels to your pot, then wait for them to pop.
Step 3
Once you hear all of the test kernels pop, remove the pot from the heat and turn the burner off.
Step 4
Add remaining kernels, cover pot, and give it a light shake to distribute the kernels evenly. Then let the pot rest for 60 seconds to make sure the oil doesn't get too hot.
Step 5
Turn the heat back to medium, place the pot on the burner and carefully move the pot back and forth over the heat to ensure even cooking and prevent burning. Once it starts popping, tip the lid off a little bit to allow steam to escape.
Step 6
Remove the lid and put popcorn into a large serving bowl. Add Honey Butter Seasoning to taste, toss to combine, and serve immediately. Add more seasoning to taste as needed.
Recipe Notes
Using a heavy-bottomed pot helps maintain an even cooking temperature and prevents the kernels from burning. High-heat cooking oils, such as avocado or coconut oil work well for popping on the stovetop.
