Khao Soi Curry Noodle Bowl

Ingredients

Khao Soi Curry 1 package Khao Soi Curry (net wt. 1.12 oz.)
3½ Tbsp. water 2 Tbsp. coconut oil 1 (13.5 oz.) can coconut milk, divided (reserve 3 Tbsp. for drizzling) 1 3/4 cups chicken broth ¼ cup soy sauce 1 Tbsp. brown sugar 1½ lbs. boneless, skinless chicken thighs, cubed 1 lime, juiced (about 2 Tbsp.) 12 oz. fresh flat egg noodles (wonton noodles) See Serving Suggestions for garnishes

Recipe Notes

Mike's Upgrades: Use bone-in chicken drumsticks for a more authentic Khao Soi. Grill or roast until lightly charred and cooked through. Make your own crispy noodles by cutting fresh wonton noodles into 4-inch lengths and frying in 350°F oil 2 to 3 min., until golden.
Garnish with fresh cilantro, scallions or chives, sliced shallots or red onion, pickled mustard greens (or pickled carrots or daikon), fried noodles, and Garlic Chili Crisp Oil.

Khao soi is a little different from what many of us picture when we think of curry. Rather than a thicker curry spooned over rice, it starts with a rich, aromatic broth made with coconut milk and chicken or vegetable broth, with egg noodles swimming right in the bowl. That means eating it takes two hands: chopsticks, or a fork, for the noodles, protein andtoppingsand a spoon for all that flavorful curry broth.
