Mexican Street Corn Ribs

An epic side for summer cookouts. The corn curls as it cooks, letting the kernels soak up every bit of seasoning while creating a rib-like shape that’s perfect for eating by hand. Try with Kicked-Up Mexican Street Corn Seasoning for more heat.

Ingredients
4 whole corn cobs, husked and cut into quarters 3 Tbsp. Olive Oil or butter
Mexican Street Corn Seasoning
2 Tbsp. Mexican Street Corn Seasoning, plus more for garnish
For serving:
1/4 cup Cotija cheese, crumbled
2 Tbsp. fresh cilantro, chopped
Mexican Crema, for drizzling
1 lime, cut into wedges

Directions
Step 1
Husk corn and remove silks. Lay corn flat on a cutting board and trim ends so they are even. Split corn lengthwise with a sharp knife. Cut halves into quarters. Or, cut corn in half first for shorter ribs. Each whole corn cob will yield 4 corn ribs.
Step 2
Place corn ribs in a large bowl and toss with olive oil. Sprinkle with Mexican Street Corn Seasoning, tossing as you sprinkle, to coat as evenly as possible. Rub extra oil and seasoning into corn ribs with your hands.
Step 3
To air fry: preheat to 400 degrees (or high) and arrange corn ribs in a single layer in air fryer basket. Cook for 10-12 minutes, flipping after 5 minutes, or until tender and crispy.
Step 4
To bake: preheat oven to 375 degrees and arrange corn ribs in a single layer on a foil-lined baking sheet. Cook 25 to 30 minutes, flipping after 10 minutes, until tender and crispy.
Step 5
Transfer corn ribs to a serving dish. Drizzle on Mexican crema, then top with cotija cheese and cilantro. Sprinkle Mexican Street Corn Seasoning on top and serve with lime wedges on the side.
Recipe Notes
Mix Mexican Street Corn Seasoning or Kicked-Up Mexican Street Corn Seasoning, to taste, into 3-4 Tbsp. of melted butter. After cooking and before adding the toppings, put corn ribs back into the bowl, pour butter over, and toss. Then transfer to the serving dish and add toppings.
Get creative with how you season your corn ribs. You can keep it simple with butter and salt, or use your favorite spice blend for a flavorful twist.
