Mexican Street Corn Ribs

Ingredients

4 whole corn cobs, husked and cut into quarters 3 Tbsp. Olive Oil or butter
Mexican Street Corn Seasoning 2 Tbsp. Mexican Street Corn Seasoning, plus more for garnish
For serving: 1/4 cup Cotija cheese, crumbled 2 Tbsp. fresh cilantro, chopped Mexican Crema, for drizzling 1 lime, cut into wedges

Recipe Notes

Mix Mexican Street Corn Seasoning or Kicked-Up Mexican Street Corn Seasoning, to taste, into 3-4 Tbsp. of melted butter. After cooking and before adding the toppings, put corn ribs back into the bowl, pour butter over, and toss. Then transfer to the serving dish and add toppings.
Get creative with how you season your corn ribs. You can keep it simple with butter and salt, or use your favorite spice blend for a flavorful twist.
