Ingredients
1 sheet puff pastry, rolled to 1/8-inch thickness 3-4 baking apples, peeled, cored, and cut into thin slices 2 tsp. lemon juice
Whiskey Barrel Smoked Sugar
1/4 cup Whiskey Barrel Smoked Sugar, plus more for garnish
2 Tbsp. cornstarch
Pumpkin Pie Spice
1 ½ tsp. Pumpkin Pie Spice
1 egg, beaten
2-3 Tbsp. salted caramel sauce, for drizzling
Whiskey Barrel Smoked Sea Salt
1/4 cup Whiskey Barrel Smoked Sea Salt, to garnish
Directions
Step 1
Preheat the oven to 400°F.
Step 2
Lay rolled puff pastry on a round pizza pan or sheet plan.
Step 3
In a large bowl, add apples and lemon juice and stir until coated. Add Bourbon Barrel Smoked Sugar, cornstarch, and Pumpkin Pie Spice. Toss to coat apples evenly.
Step 4
Place the apple mixture, and any juices, in the center of puff pastry leaving a 2-3-inch border all around. You can either spoon the filling in or arrange it into a design.
Step 5
Gently fold the puff pastry edges over the filling, overlapping the dough as needed. Press dough lightly to seal the edges. Brush the edges of the crust generously with egg wash. Drizzle apples with salted caramel sauce and sprinkle apples and crust with Bourbon Barrel Smoked Salt and Bourbon Barrel Smoked Sugar.
Step 6
Refrigerate the galette to allow flavors and pastry to settle, at least 10 minutes, or until chilled.
Step 7
Place pan on the top rack of oven and bake for 20 minutes. Rotate pan, lower heat to 350°F and bake another 8 to 10 minutes until lightly browned.
Step 8
Remove from oven and slightly cool, about 10 minutes.
Step 9
Cut and serve warm with a scoop of vanilla ice cream.
Recipe Notes
Baking apples stay firm in the oven, so your desserts keep their shape and texture. Granny Smith, Honeycrisp, Braeburn, Jonagold, and Fuji are all great picks. For deeper flavor, try mixing sweet and tart apples together.
