Southwestern Egg Rolls with Avocado Ranch Dipping Sauce

Ingredients
For egg rolls: 1½ cups rotisserie chicken, finely chopped (about 8 oz) 1 cup shredded Monterey Jack cheese ½ cup frozen corn, thawed ½ cup canned black beans, drained and rinsed ½ cup fresh baby spinach, finely chopped ¼ cup red bell pepper, finely chopped ¼ cup scallions, thinly sliced 1 Tbsp. pickled jalapeño, finely chopped
Taco Seasoning
2 Tbsp. Taco Seasoning
Kosher Salt
1 tsp. Kosher Salt
8 (8-inch) flour tortillas
Vegetable oil, for frying
For Avocado Ranch Dipping Sauce:
1 avocado, mashed until smooth
3/4 cup mayonnaise, divided (½ cup + 2 Tbsp)
Buttermilk Ranch
1 Tbsp. Buttermilk Ranch Spice & Easy
1/2 cup whole buttermilk
Directions
Step 1
In a small bowl, whisk together mashed avocado, mayonnaise, buttermilk, and Buttermilk Ranch until smooth and creamy. Cover and refrigerate until ready to serve.
Step 2
In a medium bowl, combine chicken, Monterey Jack cheese, corn, black beans, spinach, red bell pepper, scallions, pickled jalapeño, Taco Seasoning, and Kosher salt. Stir until evenly mixed.
Step 3
Place about ½ cup of filling in the center of a tortilla. Fold in the sides over the filling, then roll very tightly toward the top flap.
Step 4
Spread 1–2 teaspoons of Avocado Ranch Dipping Sauce along the inner edge of the tortilla flap. Finish rolling to seal and secure with a toothpick. Repeat with the remaining tortillas.
Step 5
Pour oil to a depth of about ½ inch into a large skillet or cast-iron pan. Heat over medium-high until oil reaches 350°F.
Step 6
Carefully add 3–4 egg rolls to the pan, placing them seam side down first. Gently press each egg roll with tongs or a spatula for 10 seconds to set the seal.
Step 7
Continue frying, turning as needed, until golden brown and crisp on all sides, about 3–4 minutes total. Transfer to a paper towel–lined plate and repeat with the remaining egg rolls.
Step 8
Slice egg rolls at an angle and serve warm with Avocado Ranch Dipping Sauce.
