Truffle Butter Soft Scrambled Eggs on Toast

Humble eggs meet rich Black Truffle Compound Butter served over toast for an easy, high-low breakfast that's fancy and tastes decadent.

Step 1
In a large bowl, whisk together eggs, half-and-half, and Salt & Pepper Tableside Seasoning until yolks and whites are just blended.
Step 2
Put a 10-inch sauté pan over low heat. Once heated, add butter and let it start to melt.
Step 3
Add mixture into the pan but don't mix it yet. Allow eggs to slowly warm over low heat between 3 to 5 minutes. Once they have started to cook on the bottom, use a rubber spatula to scrape the pan and gently fold cooked eggs over uncooked eggs. When they start to look like custard, stir rapidly until they are very soft. Remove the pan from heat before the eggs are fully cooked. Stir in Black Truffle Compound Butter immediately.
Step 4
Place toast on plates, spoon eggs over toast and garnish with Freeze Dried Chives.
