4 cups vegetable broth

2 Tbsp. olive oil

1/2 cup small diced white onion


2 tsp. fresh minced ginger

6 Tbsp. light brown sugar


4 Tbsp. lime juice

1 cup crushed pineapple

Directions

In a large saucepan, bring broth to a boil, then lower heat and simmer while preparing remaining ingredients. Meanwhile, in a medium saucepan, heat oil over medium heat, add onion and cook until onion softens and starts to brown, about 5 to 8 min. Add cooked onion to simmering broth, stir in remaining ingredients, bring to a boil, then lower heat and simmer until reduced to a thick sauce, about 20 min. Serve as is for a slightly chunky sauce, or transfer mixture to a blender or food processor and puree for a smoother sauce.
