Jerk Tamarind BBQ Sauce

This aromatic, herby barbecue sauce is perfect served up with any protein.
Serves
3 cups
Ingredients
Caribbean Green Jerk Seasoning
6 Tbsp. Caribbean Green Jerk Seasoning
Tomato Powder
1 Tbsp. Tomato Powder
2 Tbsp. soy sauce
1/2 cup water
Minced Garlic
1/2 tsp. Minced Garlic
2 Tbsp. fresh minced ginger
4 Tbsp. olive oil
For the sauce:
Liquid Tamarind Paste Concentrate
1/2 cup Liquid Tamarind Paste Concentrate
2 Tbsp. dark rum
2 Tbsp. brown sugar
1 cup pineapple juice
Directions
In a small bowl, thoroughly mix together all paste ingredients. Transfer paste to a medium saucepan and toast over medium-high heat for 2 to 3 min., stirring constantly. Stir in sauce ingredients, bring to a boil, then reduce heat to low and cook for 6 to 8 min. to thicken sauce.
