The Best Birria Tacos

Ingredients

3-5 lbs. chuck roast and/or 1 lb. bone-in beef short ribs (or combination)
Kosher Salt Kosher salt, to season meat
Birria Blend 8 Tbsp. Birria Blend
4 Tbsp. neutral cooking oil, such as avocado oil, divided 1 yellow onion, finely dice 4 cloves garlic, chopped 1 (14 oz.) can crushed tomatoes 6 cups beef broth 1 package corn tortillas, for serving ¼ cup white onion, finely diced ¼ cup queso fresco or cotija cheese, crumbled ¼ cup cilantro, chopped 3 limes, cut in wedges

Recipe Notes

Birria originated in Jalisco, Mexico to make goat meat more palatable. It’s evolved into a beef-based dish, gaining worldwide popularity due to its rich, complex flavors and savory consommé dipping sauce.

We recommend using 2 Tbsp. of Birria Blend for each pound of meat.

Choose a neutral oil such as avocado, safflower, or sunflower oil. Their flavors won’t compete with your spices, and they’re built to handle high temps.
