Use this dry rub for chicken, or to season any poultry including turkey, and duck. Also try these sweet and spicy flavors on pork, seafood, and vegetables.

A Journey of Flavor

Sugar is the first ingredient in Caribe Citrus Poultry Spice, and for good reason. Much like traditional American BBQ rubs, the sugar cane sweetness helps form a caramelized crust while balancing the heat of black pepper and ginger. From there, we layered in allspice for warmth and citrus for brightness, with coriander, annatto, and turmeric adding depth and color. The result captures a true sweet-heat balance with a tropical edge. I use it most often on chicken, turkey, or duck, but it’s just as good on pork tenderloin, seafood, or roasted vegetables. I like to rub it generously under and over the skin so the sugar and spices have time to settle in before cooking, which creates a crispy, flavorful finish. One of my favorite methods is on a spatchcocked chicken before smoking, where the low-and-slow approach gives it a rich Caribbean twist. Using Caribe Citrus at home: Rub generously on chicken, turkey, or duck before roasting or smoking. It also works beautifully on pork tenderloin, seafood, or roasted vegetables for a tropical sweet-heat boost.

How do you use poultry rub on chicken?



When using poultry seasoning as a dry rub for chicken, use 1 tsp. of chicken seasoning, like our Caribe Citrus Poultry Spice, per pound. Generously rub the poultry seasoning on the outside of the skin and/or underneath the skin before cooking. Use sweet & spicy chicken rub with olive oil or melted butter, if desired, to help it stick.



How long do you leave dry rub on chicken?



Leave a dry rub seasoning like our Caribe Citrus Poultry Spice for at least somewhere between 15 minutes to 2 hours.
