Fried chicken is also common, and much like how we’ve embraced lemon pepper here at home, Caribbean cooks have their own version. Theirs leans less on black pepper and more on the gentle heat of ginger, with a touch of allspice adding a warm, aromatic finish.

That idea inspired us to rethink a classic lemon-garlic blend and give it a Caribbean twist. We started with lemon peel and garlic, then layered in turmeric, allspice, and ginger for warmth, depth, and a touch of color. The result is a mild, versatile seasoning that feels bright and familiar while carrying island character.

Using Hidden Cove at home: Shake onto chicken or fish before grilling, or use it for fried chicken by mixing ¼ cup of seasoning with 1 cup of flour. Dip the chicken in buttermilk, dredge it in the flour-spice mix, and fry for a crisp, Caribbean-style finish.

For a lemon-garlic marinade: In a glass bowl, combine 4 to 5 Tbsp. Hidden Cove with 2 Tbsp. soy sauce or tamari, 4 Tbsp. cider or balsamic vinegar, 4 Tbsp. orange juice, and 2 Tbsp. lemon or lime juice. Whisk vigorously until thoroughly blended. Marinate for at least 4 hours or up to overnight.
