Ingredients

3 oz. egg whites (from about 3 large eggs)

1/2 cup granulated sugar


1/2 cup unsalted butter, melted

3 Tbsp. water


1 cup all-purpose flour

Directions

Step 1: Write fortunes

On 24 small slips of paper, write short predictions, jokes, pieces of wisdom, or affirmations and set aside.

Step 2: Mix batter

To a medium bowl, add egg whites, sugar, and Honey Powder. Using a hand or stand mixer, whip mixture on medium speed for about 3 min. until slightly frothy with large bubbles on the surface. Add butter, water, and Pure Almond Extract and mix until combined. Add flour and mix just until flour disappears.

Step 3: Bake cookies

Preheat oven to 375 degrees. Line a baking sheet with a silicone baking mat or parchment paper. Scoop 1 Tbsp. of batter onto baking sheet and use bottom of tablespoon to spread into a thin, 3-inch circle. Only add 3 batter circles at a time to baking sheet. Sprinkle Black Sesame Seeds and Toasted Sesame Seeds around the outer edge of each circle. Bake for 7 to 9 minutes, rotating baking sheet halfway through, until outer half-inch of cookies are lightly browned.

Step 4: Shape cookies

Working quickly as soon as cookies are out of the oven, flip each cookie over. One at a time, place a fortune in the center and fold each cookie in half, then fold over the edge of a glass to achieve folded horseshoe shape. Cookies will be hot. Move quickly to avoid burning fingers, and use gloves or tongs to help form fortune cookie shape. Set each formed cookie in a muffin tin to hold shape while the cookie hardens. Repeat steps 2 and 3 for remaining batter.
