Ingredients

2 pita rounds, cut into bite-size pieces

1/2 cup extra virgin olive oil

1/4 cup lemon juice


2 scallions, thinly sliced




3 large tomatoes, diced

1 cucumber, diced

1 Tbsp. chopped fresh parsley

Directions

Step 1: Toast pita

Preheat oven to 350 degrees. Spread pita pieces on a baking sheet and toast for 12 min. until lightly crisped. Remove from oven and reserve.

Step 2: Make vinaigrette and toss salad

In a medium bowl, whisk together olive oil, lemon juice, Za'atar Seasoning, scallions, Minced Garlic, Mayan Sea Salt, and Coarse Black Malabar Pepper. In a large bowl, combine all ingredients and let sit 10 min. before serving.
