The word curry is derived from the word kaari meaning sauce or gravy. In India, pronunciation and meaning can vary between castes. To vegetarians it means vegetables cooked with spice and coconut. To meat-eaters it is pronounced with an emphasis on the end, and simply meaning meat.

To ensure the best flavors are reached we recommend that customers make a curry paste out of our powders by using equal parts spice, water, and a neutral flavored oil (like canola or vegetable). The reason behind this is some volatile oils and flavors are fat soluble and some are water soluble. If you leave curry pastes in the refrigerator for a few days more and more of the flavors will mature.
