How to Use

1 lbs. ground beef
1 Taco Soup mix
5 cups water

Founders' Notes

This is a Spice & Easy that leans into easy without sacrificing spice. We just brown a pound of ground meat, stir in a few cups of water with the mix, and let it simmer when we want something quick and comforting. If we’re going all out, we top it with crumbled tortilla chips, shredded cheese, diced tomatoes, cilantro, and a dollop of sour cream.

DIRECTIONS:

In a large pot, cook ground beef over medium-high heat for 5 to 7 min. until browned. For a lighter soup, drain off fat. Stir in Taco Soup mix and water. Reduce heat to medium-low and simmer (uncovered) for 15 to 20 min. until vegetables have softened and soup begins to thicken.

SERVING SUGGESTIONS:

Top with cheese, sour cream, avocado, tortilla chips, or lime wedges.

NOTES:

For a chicken tortilla soup style of Taco Soup, stir in shredded chicken before serving (instead of ground beef).

For a vegetarian/vegan version, use ground seitan or impossible meat.

YIELDS:

Serves 6.
