How to Use

Khao soi is a little different from what many of us picture when we think of curry. Rather than a thicker curry spooned over rice, it starts with a rich, aromatic broth made with coconut milk and chicken or vegetable broth, with egg noodles swimming right in the bowl. That means eating it takes two hands: chopsticks, or a fork, for the noodles, protein and toppings and a spoon for all that flavorful curry broth.



Making our version starts by mixing Khao Soi Curry with water to form a paste, then frying it briefly in coconut oil before adding the coconut milk and broth. That quick step is important. Cooking the paste in oil wakes up the spices and begins building the flavor of the broth before the other ingredients ever hit the pan. Soy sauce adds savory depth, brown sugar brings a touch of sweetness, and fresh lime juice added at the end brightens everything up.



But what really makes khao soi special is everything that happens around that broth. The bowl is traditionally finished with crispy fried noodles, pickled mustard greens, sliced shallots, fresh herbs, lime, and chile. Those aren't just toppings piled on for looks. Each one changes the experience, adding crunch, acidity, freshness, heat, or brightness to balance the richness underneath.



For our version, we're replacing the traditional Thai chile condiment with our Garlic Chili Crisp Oil, made from Garlic Chili Crunch, oil, and toasted sesame seeds. It brings the chile heat along with crispy garlic and a little nuttiness from the sesame. And don't skip those crispy noodles. You can certainly buy them, but if you want to take your bowl to the next level, cut fresh wonton noodles into strips and fry them until golden. Between the soft noodles swimming in the curry broth and the crispy noodles piled over the top, you get two completely different textures from the same ingredient.



That's really what I love about a bowl of khao soi. Rich and bright. Soft and crunchy. Savory, slightly sweet, acidic, and spicy. You can pull a little something different into every bite, which makes eating it almost as much fun as making it.

A Journey of Flavor

Our Khao Soi Curry was inspired by a dish Janet, and I learned to make from a local woman named Ae while visiting Chiang Mai in northern Thailand in 2019. Seven years later, as I began seeing khao soi appear on more Thai restaurant menus here at home, I decided it was finally time to recreate the flavors Ae taught us and make this regional Thai favorite more approachable for our customers.



The blend is built around coriander and guajillo chile, with shallot, turmeric, ginger, and black cardamom creating its aromatic depth. Of those ingredients, black cardamom was the key to getting the flavor right. Unlike the sweeter, floral character of the green cardamom more familiar in Indian curries, black cardamom brings a deeper, smoky, earthy character that helps give khao soi its distinctive flavor.



Khao Soi Curry is designed to become the flavor foundation for the dish rather than trying to put the entire bowl into one seasoning. Mix it with water to create a curry paste, fry that paste briefly in coconut oil to wake up the spices, then add coconut milk and broth to begin building the rich curry broth that defines khao soi.



The result is our way of making a dish we first experienced in Chiang Mai easier to recreate at home, while preserving the flavors that made us want to bring it home in the first place.
