Thai Curry Slaw

Super easy slaw with tons of curried flavor!
Serves
6 to 8 servings
Ingredients
1 (16 oz.) package slaw mix 1/4 cup chopped cilantro 1/4 cup thinly sliced scallion 1/2 red bell pepper, thinly sliced 3 Tbsp. lime juice 3 Tbsp. rice wine vinegar 1 Tbsp. sesame oil 4 Tbsp. canola oil 2 Tbsp. honey 1 Tbsp. Thai Green Curry Salt & pepper, to taste

Directions
Place first 4 ingredients in a large bowl and toss to combine. Whisk together remaining ingredients in a separate small bowl. Pour dressing over slaw mixture, cover and set in refrigerator for at least an hour before serving, stirring periodically.
