Za’atar Roasted Squash with Citrus Drizzle

Za’atar adds tangy, earthy, and nutty warmth to roasted butternut squash. A citrus drizzle over the top lifts all the flavors and brightens every bite. Make a familiar favorite like squash into something new with a twist that makes you want to go back for one more bite.

Ingredients
1 butternut squash (around 2 lbs.), peeled, seeded, and cut in 1-2" cubes or wedges 4 Tbsp. extra-virgin olive oil, divided ¼ cup tahini ¼ cup orange juice, freshly squeezed 1 lemon (small to medium), juiced 1 Tbsp. water
Za'atar
1 Tbsp. Za'atar Seasoning
Sel Marin de Guerande Grey Sea Salt
1/4 tsp Sel Marin de Guerande Grey Sea Salt, divided
1/4 cup walnuts, hazelnuts, or pecans, roughly chopped and toasted
French Fleur de Sel
French Fleur de Sel, for garnish to taste
Fine Black Malabar Pepper
Fine Black Malabar Pepper, to taste
Parsley, roughly chopped for garnish (optional)
Directions
Step 1
Preheat oven to 475° F.
Step 2
Place squash on a foil-lined baking sheet then drizzle with 3 tablespoons olive oil and thoroughly coat squash by rubbing it in. Lightly season with around 1/8 teaspoon Sel Marin de Guerande Grey Sea Salt and Fine Black Malabar Pepper.
Step 3
Place in the oven and roast for about 15 minutes, until the squash starts to turn brown.
Step 4
Meanwhile, pre-heat a small pan over medium-high heat. Once hot, add 1 tablespoon olive oil and nuts. Toast until fragrant and slightly darker in color, being careful not to burn. Move nuts to a bowl to cool.
Step 5
Remove squash from the oven, stir in Za'atar Seasoning, and put back in the oven for another 15 minutes, or until the squash is tender enough for a fork to pierce through easily.
Step 6
While the squash finishes cooking, place tahini, orange, and lemon juice in a bowl and stir to combine. Add enough water to thin the mixture, enough to drizzle on the squash later. Add Sel Marin de Guerande Grey Sea Salt and mix.
Step 7
When squash is tender, transfer it to a serving platter. Drizzle tahini mixture on squash, and top with toasted nuts, a sprinkle of French Fleur de Sel, and parsley.
Recipe Notes
To make prep a little easier, pick up pre-cut, seeded butternut squash at your local grocery store.
