Ingredients

1 butternut squash (around 2 lbs.), peeled, seeded, and cut in 1-2" cubes or wedges 4 Tbsp. extra-virgin olive oil, divided ¼ cup tahini ¼ cup orange juice, freshly squeezed 1 lemon (small to medium), juiced 1 Tbsp. water
Za'atar 1 Tbsp. Za'atar Seasoning
Sel Marin de Guerande Grey Sea Salt 1/4 tsp Sel Marin de Guerande Grey Sea Salt, divided
1/4 cup walnuts, hazelnuts, or pecans, roughly chopped and toasted
French Fleur de Sel French Fleur de Sel, for garnish to taste
Fine Black Malabar Pepper Fine Black Malabar Pepper, to taste
Parsley, roughly chopped for garnish (optional)

Recipe Notes

To make prep a little easier, pick up pre-cut, seeded butternut squash at your local grocery store.
